ABOUT GLUTEN

According to Wikipedia, gluten is
a composite of the proteins gliadin and glutenin [that] exist, conjoined with starch, in the endosperms of some grass-related grains, notably wheat, rye, and barley.
Although gluten is found in most of the world's dietary supply – including in wheat, barley, rye, spelt, oats, malt, bulger, triticale, spelt, durum, semolina, couscous, kamut, graham, seitan, and udon – about 1% of the world's population cannot safely consume it. Most of the people who cannot eat gluten have celiac disease, an autoimmune disorder that affects primarily the intestines. For celiac patients in particular, even the tiniest bits of gluten can lead to severe medical issues, including cancer.

Since gluten-containing grains, especially wheat and barley, are so prevalent in the food supply, including in items where one would not expect to find them – like many types of soy sauce, broths, beverages, dairy products, and even Rice Krispies – gluten can be an absolute nightmare for those who cannot tolerate it. Gluten is also found in products like lotions, soaps, shampoos, lip balms, adhesives, and even the backs of many stamps.

This hatelisting exists as a place for all of us who spend way too much of our lives on the look-out for this dreaded lurking menace to unite and show our hatred of it.
